Cutting depth is determined by the size of the blade. 31/2″ sounds abour right. Just cut as deep as the saw will allow and bust out the rest. For get the patch, thay look like crap. Stick with your paver idea.

I believe I saw a ten-inch blade (suitable for concrete/tile cutting) just the other day while shopping at Lowe’s. That would give a reach of aprx 5 inches. But, I don’t know if portable saws will accomdate this size.
One advantage for using pavers is they will move with change and won’t crack like concrete can/does.
good luck

Would be more expensive, but you can rent gas powered cut saws that will go through concrete. They are similar to those used by concrete contractors to cut re-bar and concrete grooves. Most look a bit like a chain saw equipped with a circular blade that is usually about 10 inches diameter, giving you a bit more than four inches down cut.
And, I know your desire to use the cut blocks for a wall may be economy and environmentally driven, but the cost of pre made blocks is very low right now due to the season ending and any Menards or Home Depot should have decorative blocks on sale for better looks.
